A square cake throws people off. Most of us grew up cutting round cakes into wedges, so when you set a square one down with that hole in the middle, folks stand there wondering where to make the first cut. Here's the way I do it, and it gives you clean, even pieces every single time.
Completely cooled cakes cut the cleanest. If you want the neatest slices, refrigerate or freeze the cake first, then slice. But- make sure to serve at room temperature!
I start with four straight cuts, one on each side of the center hole. That leaves two long loaves and two short ones. Then, I'll slice them straight as evenly as possible. Go thin for a crowd or thick for a treat. Either way, every piece comes out the same tidy size.
In this guide, I cut the black lines first, then the white ones. Give it a try the next time you bake one up. I think you'll never go back to wedges.
