Should I buy the one piece or two piece pan?
It depends what you usually bake! If you want flexibility for both pound cakes and angel food cakes, then the 2-piece is better, but if you're a pound cake and bundt cake baker then 1 piece could be for you.
2-piece pans make it much easier to remove cakes since they have a removable bottom, but it is more likely to leak than a 1-piece pan. A 1-piece pan is a bit harder to remove a cake if it sticks, and the top could get crushed while removing a cake.
2-piece pans are originally designed for angel food cakes, but can also be used for pound cakes, bread, or traditional cakes, and 1-piece pans can be used for all the same but would be more difficult to release angel food cakes from.
