Baking with a Two-Piece Pan

These pans with removable bottoms were originally designed for easy release of angel food cake. The design pretty much guarantees you can release any cake from the pan! And, you can lift cakes from the center piece to preserve the crispy tops.

It works great with other kinds of cake batters, too, but requires an extra step of preparation to prevent batter leaks compared to our one piece pan.

Trace the center piece onto parchment paper and cut it out. Lay the parchment between the two pieces before assembling, and place a baking sheet on the rack below as an added precaution.

To remove the cake, either invert the pan, or set it over a can and push down. You can invert the center piece to remove the cake or use two large sturdy knives to lift the cake from the insert.
