



Should I buy the one piece or two piece pan?
If you want flexibility for both pound cakes and angel food cakes, the 2-piece pan is your best bet. It’s originally designed for angel food cakes and makes removing any cake easier thanks to the removable bottom- but it can be more prone to leaking with thinner batters. You’ll want to place a square of parchment paper between the two pieces each time you bake to prevent leaks.
If you mostly bake pound cakes or bundt-style cakes, the 1-piece pan might be for you. There's less risk of leaking, but it can be a little harder to remove a stuck cake, and you might risk crushing the top if you have to flip it out.
Both can handle everything from pound cakes to sponge cakes to boxed mix cakes to fruit cakes-it just comes down to your baking style and which trade-offs you prefer.
