If you love chocolate, you'll love this cake! It comes together quickly in just one bowl with no special equipment needed. The crumb sinks into the cake and adds a rich, salty chocolate "rubble" to the cake.
1 3/4 cups cake flour
1/2 cup cocoa powder
2 cups sugar
2 1/2 teaspoons baking powder
1 teaspoon salt
1 cup milk
2 sticks butter, melted
1/2 cup heavy cream
2 large eggs
1 tablespoon vanilla extract
Make Chocolate Crumb (recipe below) then place in fridge while making cake batter. Preheat oven to 350°F. Grease a 9x13 pan. In a large bowl, add all dry ingredients and stir with the Old Country Kitchenware Slotted Scoop to combine thoroughly. Make a well in the center. Add all wet ingredients in the well - start stirring by breaking up the eggs in the wet ingredients then start to incorporate the dry ingredients. Stir just until thoroughly moistened. Pour batter into prepared pan and top with crumb. Bake for 45 minutes or until a skewer inserted into the cake comes out nearly clean. Let cool completely and dust with powdered sugar. Slice and serve with Old Country Kitchenware Spatula.
Chocolate Crumb
2/3 cup flour
1/2 cup sugar
2/3 cup cocoa powder, preferably dutch processed
1 teaspoon salt
6 tablespoons butter, softened
2 teaspoons vanilla extract
Combine all ingredients in a bowl and blend in butter with the Old Country Kitchenware Mixing Fork until all dry ingredients are moistened and the mixture resembles wet crumbs.
