This granola never lasts long in my house! It's crispy, flavorful, and rich.
3 cups rolled oats
1 cup raw pecan pieces
1 cup sweetened shredded coconut
1/2 cup light brown sugar
1/4 cup white sugar
1 stick butter
1 teaspoon vanilla extract
2 teaspoons salt
Preheat oven to 300F. In a large bowl, toss together oats, pecans, and coconut with Old Country Kitchenware Slotted Scoops. In a saucepan, melt together light brown sugar, white sugar, and butter and stir with Old Country Kitchenware Scrape Spoon. Stir until bubbly and sugar is dissolved. Remove from heat and stir in vanilla and salt. Pour over oats and toss everything together. Spread onto a parchment lined sheet tray and bake for 30-40 minutes or until golden. Break up into clusters and allow to cool fully before storing.
