The recipe for these rich, tangy lemon squares came from a 1987 cookbook! I added vanilla in my version.
1 stick butter, softened
1 cup all purpose flour
1/4 cup sugar
2 eggs
1 cup sugar
2 tablespoons flour
2 tablespoons lemon juice
1/4 teaspoon baking powder
Powdered sugar, for the top
Preheat oven to 350F. Cut butter into flour and sugar with the Old Country Kitchenware Mixing Fork and press into greased 9 by 9 inch pan. Bake 15 minutes until edges are browned. Beat eggs with the mixing fork, and mix in remaining ingredients. Bake 22-25 minutes or until set. Cool completely and dust with powdered sugar. Cut into squares with the Old Country Kitchenware Spatula.
