This comfort food is a perfect way to eat leaf lettuce from the garden. This is also called kilt (killed) lettuce. It serves 4 as a side salad. The Old Country Kitchenware Slotted Scoop is great for this dish! You can strain the bacon out of the fat, stir the dressing together, toss the salad, and serve the salad with it.
2 heads butter lettuce or other fresh leaf lettuce, rinsed and dried
1 small bunch green onions or spring onions, sliced
8 slices thick cut bacon (about 10 oz)
1/4 cup cider vinegar
1/4 cup water
1 tablespoon sugar
Salt and pepper to taste
Tear lettuce into smaller pieces and add to a heatproof bowl with green onions. Slice bacon into small strips. Cook in a skillet over medium heat until fat is rendered and bacon is crispy. Remove bacon, leaving about 1/4 cup drippings in the pan. Add vinegar, water, and sugar to the pan. Stir to dissolve sugar and loosen browned bacon bits from the pan, then bring to a boil. Pour hot dressing over the lettuce, add back the bacon, and toss to wilt the lettuce and combine everything. Add salt and pepper to taste. Serve immediately.
