This dish reminds me of my childhood every time I have it. It's one of my favorite comfort foods.
4 strips of bacon, sliced
1/2 onion, diced
1/2 head of cabbage, sliced into ribbons then in thirds
Salt and pepper to taste
Heat a cast iron skillet over medium heat and allow the bacon to render and crisp, stirring occasionally with the Old Country Kitchenware Slotted Scoop. Remove bacon, draining the drippings back into the pan with the scoop. Add onion and cook until translucent. Turn the heat up to medium high. Add cabbage and toss to combine. Season with salt and pepper. Press the cabbage down into the pan and let it sit for 5 minutes. Lift and turn over the cabbage and press down again. Let cook for another 5 minutes. Once cabbage has wilted, stir occasionally making sure to scrape up any browned bits on the bottom. Cut larger pieces of cabbage with the slotted scoop. Keep cooking until soft and browned. Add bacon back and toss to combine.
